Shannon Mendez joined the Spartan Athletic Performance Staff in June 2021 as a volunteer Sports Dietitian. She was hired on a part-time basis in September 2021 and spent the 1’21-‘22 school year building the SJSU Sports Nutrition program. In June 2022, she was hired full-time as an Assistant Athletic Performance Coach/Sports Dietitian. Mendez is responsible for the Sports Nutrition Program at SJSU, and is the strength and conditioning coach for the cheer team, and assists with Women’s basketball and Track & Field.
Mendez has an eclectic background in the health and fitness industry as a fitness coach, personal trainer, yoga instructor, and Registered Dietitian. A lifelong athlete, Mendez played
collegiate basketball at Sonoma State University during her undergraduate years while studying Business Administration. After graduating, she became a Certified Strength and Conditioning Specialist (CSCS) and spent several years coaching in gyms and training centers before going back to school to earn a Master’s degree in Nutritional Sciences from San Jose State University in 2019. In 2020, she completed her dietetic internship and passed the registration examination for dietitians. Mendez is thrilled to be the first Sports Dietitian on the Athletic Performance Staff at her alma mater, where she has the opportunity to work with student-athletes every day to optimize their sports performance.
